Set field to Date only affecting workflow email time.

Hello,

I have a workflow that was running based on a Due Date on an Opportunity. It was set to run 1 day and 16 hours before the Due Date (So that it would always run at 8am, since otherwise it was running when the users time was midnight).
We noticed that this Due Date was changing based the users time since it was setting it to midnight in the background. I've since changed this field to be Behaviour: Date Only.

Now the workflows are running at 4am. 

Any idea why?
