How do I remove the Subject/Category field value from a case

We recently modified our Subject/Category list to store new information.  The issue is I cannot delete the old subjects as they are still linked to some open cases.  It appears there is no way to just remove the value from the field on those cases.  Is there a way to do this?  I just need them to be blank so the users can choose the new appropriate subject and I can delete the old ones.
